Taco pasta

Emily introduced me to my new favorite food blog – The Girl Who Ate Everything. Oh my goodness … there are a lot of great recipes on this site and I’m on a mission to try every one.

First up – Taco pasta.

This recipe was ridiculously yummy. And easy. And don’t judge me for eating way more than one serving …

Okay, I ate like four servings …

    Ooo! I just browsed over the site and it looks like it’s going to be a good source of inspiration for new and easy recipes in the next month. I’ve been making and freezing lasagna, chicken enchiladas, and taco rolls the past few days in preparation for not wanting to cook for a few weeks.

    And, Dude, no judgment because my baby (who had better get here soon) keeps making me drink milk shakes. And coconut rice with mango. But mostly milk shakes. My poor hips.

    My baby makes me eat classic potato chips with PB&J sandwiches. Hopefully all that peanut allergy stuff is not true, because I eat a lot of PB!

    So funny, I just stumbled across a similar recipe online and loved it so much, I even wrote about it for my free-lance job.

    There’s just something about the idea of combining tacos and pasta that is so irresistible!

    I make something almost just like this – my kids love it! Sometimes when I’m feeling creative I throw in other things … like green onions, black olives, a can of corn, shredded cheddar, and/or some chopped green chilies. Yum yum!

    I haven’t cooked any of my old standbys since I found that blog – and B thinks he’s died and gone to heaven. Will have to add this to the list!
