Slow cooker stuffed green peppers (meatless)

I picked what may be the last 6 small green peppers from the garden a few weeks back before the crop-killing frost. I usually make baked stuffed peppers. 
The only bad thing about baked stuffed peppers is all the prep and pans – I boil the peppers, cook the stuffing, cook the rice separately, etc. 
But, I saw this different version in a new Crock Pot cook book that I picked up and decided to try it. It was yummy and simple. This is one that is really a one-pot wonder. And a crock pot wonder at that.

My laziness kicked in and I just took a snapshot of the recipe via my new recipe book.

I’m sure this is totally illegal. If this is wrong, I don’t want to be right. Cart me off to the slammer. As long as I can bring my slow cooker with me. I don’t think I could live without it.

    Thankyouthankyouthankyou for risking your freedom to post this. I’m always looking for vegetarian slow cooker recipes- they are so few and far between! This looks delicious.

    I love finding a good slow-cocker recipe, I feel like there are more duds than winners. If only I liked peppers…

    Kim, I love stuffed peppers and always hope that SOMEONE will invite us over for some. Because, I don’t like the prep needed to make them myself. This recipe looks great, I have hope now. Might be a hit in the slam.

    i’m on the fence with stuffed peppers. not my fav.

    i have a slowcooker, but never use it. i need slow cooker recipes for one … if that’s even possible. :/

    I just used my Crock-Pot yesterday for some beef stew (mmmm) and was thinking that I should TOTALLY use it more often. But I don’t have any good recipes. I need to get this cookbook!
