Slow cooker cashew chicken

Here’s the thing – Ryan and I are huge Chinese food fans. And, I’m pretty much constantly trying recipes to try to recreate the yum-factor.

But, I have to be honest – I have yet to find something that’s as delicious as our favorite Chinese food joint.

With that said – this is a recipe we tried this week that tasted pretty great.

Is it as good as Golden Garden? No. But, it’s a nice option when you want to avoid take-out. And the fact that it’s easy to make in the slow cooker means that it can be a weeknight winner.

Slow cooker cashew chicken

(Adapted from Midwest Living)
1 can condensed golden mushroom soup
3 tablespoons soy sauce
1 teaspoon ground ginger
1 1/2 pounds chicken tenders
1 16 ounce package frozen oriental stir-fry vegetable mix
1 4 ounce can (drained weight) sliced mushrooms, drained
1/2 cup cashews
Hot cooked brown rice* (optional)

1. Combine mushroom soup, soy sauce, and ginger in slow cooker. Stir in chicken and mushrooms.
2. Cover and cook on low-heat setting for 6 to 8 hours. Add frozen vegetable mix for the last hour.
3. Stir cashews into chicken mixture. If desired, serve over hot cooked rice. Makes 6 servings.

    I’ve seen t golden mushroom soup at the grocery store and at target. It’s by Campbell’s and is with the condensed soup. Hope this helps!

    That looks yummy! Every time we have tried to recreate our own chinese food it ends up a huge mess and we end up just ordering take out!

    For a more authentic flavor, consider adding 1.5 Tbsp oyster sauce, 1 tsp sugar, 1/2 tsp sesame oil, 1/4 tsp white pepper, and 1 Tbsp rice wine to the sauce. Also? Fresh mushrooms instead of canned. And toast your cashews in a skillet before serving.

    I’m picky eater and there are only a few chinese dishes I like. But those I do enjoy I really love! I wish I could make them at home.

    We can’t get enough Chinese food in our house! Take-out or home made, we eat it probably 2 to 3 times a week. I got Ching’s Everyday Easy Chinese cookbook for Christmas and highly recommend it!

    I love cashew chicken and the fact that its crock pot means I’ll make this one for sure. We just need to get over all my food adversions right now :o)

    I always get a little freaked out about meat in the slow cooker (yes, I’m a weird chick) but I might have to try this one – cashew chicken is my fave!

    We absolutely LOVE Chinese food too. I make a couple of at-home versions, but I dont think you can ever truly replicate the taste.

    Oh yum, I’ll have to give this a try. We also love Chinese, and there’s a fantastic(ly sketchy) place 2 blocks away, so it’s way too convenient. And delicious.

    Now I’m craving wontons.

    We made this the other night: http://pinterest.com/pin/263531015665064955/ and it was amazing, but it probably helps that I don’t remember what take-out beef&broccoli tastes like. (I usually get sesame chicken, and I’m sure I’ll be disappointed when I try to make that at home.)
