New healthy chicken recipes

Here are a few recipes we’ve tried in the last month. Pretty simple and yummy. Plus, both are relatively healthy. It’s probably good to have a few healthier recipes in my arsenal.

Lemon feta chicken

Gina’s Recipes
Discovered via Miss Prissy Paige 
(Quite simple and yummy. Even Ryan liked it.)

Cilantro-lime chicken (2 servings)
Discovered via Woman’s Day magazine, January 2010
(This is refreshing and really delicious.)

2 tbsp. olive or canola oil
2 tbsp. honey
Juice of 2 lime
1/2 cup chopped cilantro
2-4 oz. chicken breast

In a small bowl, whisk together the honey, oil, lime juice and cilantro. Pour this mixture over the chicken breast and marinate in the refrigerator for 20 minutes. Discard marinade. Broil the chicken for 6 to 8 minutes per side until cooked through.

    This recipe sounds great and refreshing. I love the cilantro and honey combination. I am really looking forward to making this. I still have a jar of honey in my pantry from when I made the peanut butter granola bars recipe you posted.

    Yum! The feta cheese recipe sounds great! This looks so healthy compared to what I posted today, and what I’m posting tomorrow!

    Looks delicious Kim!! I will definitely be trying these this week! The second recipe reminded me of one I make with salmon fillets…marinate wild caught salmon fillets in a mixture of soy sauce, honey and garlic for 15 minutes, then broil. Yummy! Thanks for sharing these yummy recipes!
