Marinade-isms

So, since we had all these goodies from the Farmer’s Market, I thought I should use ’em up.

I decided to make chicken kabobs. I’ve bought them at the grocery store before, but never made them myself. They were very quick and very simple. I also came up with a really simple marinade that I modified from several that I saw on the Internet.

I used red, yellow and green peppers, red onion and one large chicken breast. I sliced the chicken into squares. I put all the items onto two kabobs (which I already had for crafting reasons).

Then, in a bowl, I mixed about 1/2 cup of Tuscan Italian dressing (left over from this) with a tsp of rosemary and salt and pepper. I just mixed it around and poured it over the kabobs. I’m sure you could also let it sit overnight, but I didn’t and it was still delicious.

The marinade was really delicious. The kabobs only took about 10 minutes to grill. I used some of the leftover marinade and poured it over as it was grilling.

I served this with corn on the cob (which, incidentally, also tastes yummy with the marinade) and mixed greens.

So, I was able to use the following Farmer’s Market finds:
-3 peppers
-Onion
-Corn
-Mixed greens

And, I figured that the meal cost about $3 cause the chicken was on super sale and I only used one for both of us. SCORE!

    YUH-UM!! When we have leftovers, we’ll even toss them into an omelette or scramble the next morning.

    I love kebabs – such a fun meal, and easy to serve to lots of people. I’m going to try your marinade recipe, looks great!
