Let’s talk about eggs (and brunch)

You may have heard that Sunday was Mother’s Day. (If not, you’d better call your mom. Right now. And apologize for missing Mother’s Day.)

My mom is still in Arizona so I didn’t get to spend the day with her, but we are lucky to have Ryan’s family close by. We hosted a little brunch to celebrate Mother’s Day with Ryan’s mom and grandma. 

I knew I wanted to try to make something in a ramekin. Mostly because I wanted to buy some ramekins. (I’m tricky like that.)
So, I picked up white ramekins at Pier One and tried my hand at these baked eggs at Kayotic.
Not only are they super cute and fancy-looking (in my very non-fancy opinion), but they also tasted good and were simple and fast. I filled mine with onions, garlic, tomatoes and fresh mushrooms. 
Simply sautee the ingredients in olive oil, put them in the bottom of a ramekin and top with a broken egg. I baked them for about 15 minutes and voila – yummy little eggs.
I rounded off the meal with hash browns, bacon and our favorite… Paula Deen’s Baked French Toast Casserole. (You must try this recipe. It’s so good.)
All-in-all, a pretty yummy little meal to celebrate the women who birthed and raised my husband and father-in-law. Accomplishments, people!
(I pulled out the chalkboard chargers for little Mother’s Day messages.)
Oh yeah, and in case you wonder what’s next in ramekin-land – 
Molten chocolate lava cakes
Instant chocolate mousse
Butterscotch pots de creme
Ida’s lemon mousse

    You are so creative with your table! I’m going to try out this egg recipe for my StepMom’s birthday/Father’s Day brunch, it looks yummy! And Paula Deen is my all-time favorite woman to go to for recipes, especially THAT french toast casserole. It’s probably one of the best I’ve ever had, SO good!

    And yes, I know I’m WAY behind in reading these, ha…..

    I love making things in ramekins! I made a triple layer mousse one year that took a million years to construct but it was oh so good. You always know how to throw a party… and this one is no exception. So yummy looking!

    I love how smart (sneaky) you are. I found some pretty colored ramekins recently but passed them by. I love my white ones, I have 2 sized that I purchased at the W-S outlet, I used them for some dip over the weekend.

    That’s totally something I would pull. Food gets made based on weird factors like serving dish shape & color. And for the longest time, I didn’t actually care if it tasted good as long as it looked awesome. Luckily I’ve come a long way. And btw, you’re such a good daughter-in-law, it looked awesome and I’m sure your inlaws think you’re the bees knees.

    Ramekin is such a fun word! Your brunch set-up was beautiful!

    Does this french toast bake crisp up well? I’ve tried 2 different recipes and they both ended up soggy..could also be because I can’t cook..just curious!!

    LOVE! i saw those ramekins at my first trip to Pier One not too long ago. I wanted some badly . . . buuuut had already spend a LOT. ah well, what can ya do.

    1) I absolutely adore the chalkboard chargers. How have I never seen those before?!

    2) Ramekins are too cool for school! I have some, but I always forget about them. I’ll have to remedy that for breakfast.

    3) Paula Deen has a french toast casserole recipe?! Must. Try. Immediately. I just know that my life needs more buuddah!

    It is so funny you posted this because I decided for next year I wanted to host a Mother’s Day brunch for my mom and my two sisters-in-law (it was not happening this year as the couch is currently in the kitchen ;).

    I am book marking this recipe and will return to it in about 11 months 😉

    French Toast Casserole looks amazing and so does your table presentation!!! I just love hosting dinners/breakfast etc. I had a question where did you get the green casserole dish? I just love it!!! =)
