Homemade peanut butter granola bars

These are really yummy. You won’t regret making them.

This was a recipe given to me by my coworker, Jodi. She always has these in her lunch. One day, she let me try a little.
I died of happiness with one bite. Then I grabbed the rest out of her hand and gobbled it down.
I didn’t really do that. But, she did give me the recipe so I could make my own.
When I made them at home, we liked them so much that they were gone in 2 days. Although, I must add the disclaimer that I only had 2 or 3. The rest were mowwed down by others, which is a good thing because I would have kept eating them. They are so addicting.
Peanut butter granola bars
1/2 cup reduced-fat creamy peanut butter
1/3 cup honey
1 egg
2 tbsp. canola oil
1 tsp. vanilla extract
3-1/2 cups old-fashioned oats
1/2 cup packed brown sugar
3/4 tsp. salt
1/3 cup peanut butter chips
1/3 cup miniature semisweet chocolate chips
1. In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended. Combine the oakts, brown sugar and salt; add to the peanut butter mixture and mix well. Stir in chips. (Batter will be sticky.)
2. Transfer to a 12-in by 9-inch baking dish coated with cooking spray. Bake at 350 degrees for 12-15 minutes or until set and edges are lightly browned. Cool on a wire wrack. Cut into bars.
They make a great snack or breakfast.

    The granola bars were so awesome, thank you for the great recipe. I didn’t have the peanut butter chips and so I used 2/3 chocolate chips- regular size which was a bit too much chocolate but still delicious. My 9 year old son took a bunch of them to school b/c he wanted to show off how his mom knows how to make “better than quaker” granola bars. He’s so cute!
