Another recipe today – I’ve been a cooking machine lately. I had been on the search for a new meatloaf recipe for a while because my old recipe never seemed to stay together after cooking. I tend to make a lot of chicken, and Ryan tends to be a red meat guy, so I thought it was time to try again.
I used this high-rated recipe via All Recipes, and made a few changes for my own taste. I highly recommend it for a moist and tasty meatloaf, and I particularly liked the addition of the parmesan cheese.
Easy meatloaf
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
1/2 cup parmesan
salt and pepper to taste
1/3 cup ketchup
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, egg, onion, milk, bread crumbs, parmesan and Worcestershire. Season with salt and pepper to taste and place in a lightly greased 5×9 inch loaf pan.
Pour ketchup over loaf.
Bake at 350 degrees F (175 degrees C) for 1 hour.
I didn’t take a photo, but take my word for it. It’s quite delicious and reheated nicely.

John likes meatloaf, so I might try this. But in my adult life I’ve never made meatloaf (bad wife I know), because my mom scarred me as a kid. She is a good cook, but I just didn’t like meatloaf…but we were a “this is dinner, this is what you get to eat” household (oh and I’m a picky eater, so I don’t blame her).
Hmm…I’m willing to try it! Never have found a good meatloaf recipe. I bet this is the one!

Ha. I love meatloaf. It was my requested meal for my birthday every year, growing up. That and Velveeta shells and cheese. I still love that c to the rap.
I made a meatloaf with a gruyere crust on top and gruyere mixed in. Oh sweet baby J, it was amazing.

I love meatloaf!! My recipe is pretty much the same as this one – nice and basic – except to add some hidden goodies, I run a few baby carrots and a handful or two of (raw) spinach leaves through my food processor and mix them into the ‘loaf. (I may add a couple Tablespoons of extra breadcrumbs to offset any moisture that the veggies add). No one is any the wiser, and it gives it a nice nutritional punch. 🙂

Ha that’s funny! I have a recipe for meatloaf lined up for next monday! I’ve never even considered adding worchestershire sauce before. Hm…
I’m not a meatloaf fan but my husband is. Thank you for this recipe. I have no idea how to cook things that I don’t like so my hubs suffers. Im going to give this one a shot just for him.
i love all recipes! i will have to give this one a try next time. i always love making an extra meatloaf or two to stick in the freezer. it makes a great freezer meal…so great for when a little one arrives:)
