One pan skillet cookies

November 27, 2011 by Kim Woodward

First up – our cookie. I tried something that I found on Pinterest and inspired by our new-found love of cast iron.

The awesome part of this cookie is that you make it all right in the skillet. No dirty pans or bowls. It was also really quick.

The bad part – Ryan and I ate ourselves sick on this cookie. It’s so good and super rich. The next day, I came home from work to find my husband gorging himself on the skillet cookie. With chocolate around his mouth, he said, “Don’t ever make this again.” 😉 (I think I’ll be making it again. Every guy needs his Kryptonite, right?)

Here’s the recipe, with my few modifications.

One-pan chocolate skillet cookie

Modified from recipe at Sophistimom
1 stick unsalted butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon pure vanilla extract
1 egg
1 1/2 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips

1. Preheat oven to 350 degrees. Melt butter in an 8 inch cast iron skillet set over medium-low heat. Stir in sugars and vanilla and remove from heat. Let rest until pan is warm, but no longer very hot, about 5 minutes.
2. Crack an egg onto the butter and sugar mixture, and use a fork to whisk it well into the mixture. Place flour, baking soda, and salt on top, and very carefully stir into the mixture until smooth and well-mixed. Stir in chocolate chips. Place in the oven for 20-25 minutes, or until starting to turn golden on the top and around the edges, but soft in the center.

I think I’m in a cookie coma just from reading! I had a recipe for a skillet cookie, but yours looks much better- maybe I should go make one, you know for research, right?

What a great use of a cast iron skillet – I’m now rethinking whether getting one is a good idea. I don’t think I’d be able to resist the charms of the one-skillet cookie 🙂

Skillet cookie. Mmmm. We made ourselves sick off of one as well. About time to make that again.

Thanks for hosting. It helps when I actually link up. I’m losing brain cells by the minute.

Thanks for sharing the skillet cookie! I’m trying to restrain myself from making one right now!! I’ve been naughty skipping out on the Dare to DIY series, but I’m still hoping to make it to at least 2 of the last 3 parties!

Oh whew! I was thinking that it was Deck the Halls week–which I want to do, but I’m not all set up yet! Glad to hear that I still have some time!

I tried to make meringues over the weekend, but they were a giant flop–maybe I’ll try again later. In the meantime, the easy lemon cake cookies look FAB. Those may replace the bacon chocolate chip ones I was planning to take to mom’s group on Th!

    mmmmmmmYummy!

Loving the links so far, but I do have to say that #12 should have a different name… “I had the stomach flu” just isn’t an appetizing name for cookies, ya know? 😉

This giant cookie in a pan is just not right. I want to dunk my head in it. It looks seriously gluttonous. And I mean that in the best, most delicious way possible.

And I can’t wait to see your winter wonderland come together in the new place!
