Chicken tortilla soup

Thank goodness, a recipe that turned out yummy.
Chicken Tortilla Soup
Cook 3 chicken breasts in olive oil
Add 1 medium diced onion
Add:
1 tbsp. chili powder
2 tbsp. oil
1/2 packet taco seasoning
3 cups chicken broth
1-15 ounce can of tomatoes
2 cans black beans
1 small can diced chili peppers
Serve with:
Sliced avocados
Shredded cheese
Flour tortillas

    I made chicken tortilla soup this weekend, too! We love it–super easy, healthy and delicious. I don’t know if your a crockpot user, but if you are it’s even easier to make. I throw in my chicken breasts frozen, add in the other ingredients on top and cook for four hours on high or eight on low, take out the chicken and shred it with forks then throw it back in and serve. I don’t even put in the oil and it’s so good and flavorful. I also like to throw in a can of corn and some minced garlic. mmm…now I’m hungry!

    I love Chicken Tortilla Soup but have never found a good recipe to make at home. I am going to give this one a whirl….it makes me hungry just looking at the pictures!

    The soup look delicious! We also have Fiesta Ware. We have the green and yellow dishes. Aren’t they great?!

    Oh man, this makes me wish I still ate meat. Maybe I could substitute vegetable broth for the chicken broth and give it a try. Thanks for sharing!
