Baked Chicken Pesto

August 7, 2011 by Kim Woodward

I’m skipping the third meal planning post this week due to vacation, but I’ll resume next week.

But, the Yummiest Meal of the Week award at the NewlyWoodwards went to Baked Pesto Chicken. So, I wanted to share it in case it fits into your meal plan for the week.

I spotted it on Pinterest and decided I must make it.

It’s really quite simple –
Chicken
+
Pesto (I used this recipe, also originally found on Pinterest)

+
Italian shredded cheese

LOVE
It may not be winning any presentation awards, but it’s delicious and simple. And even Ryan liked it a lot. And he’s not a big chicken or pesto fan. Score one for the baked pesto chicken.
So, you should definitely try this one.
Happy Sunday!

This is totes on the menu for tomorrow night…but with store bought pesto because I’m lazy. I’m glad it has the KW seal of approval.

Yum! Looks tasty. I’m always looking for new ways to dress up a boneless, skinless chicken breast, so this will have to go on my “must make” list.

I pinned that one too. As soon as I’m home long enough, I’ll be making it. I feel like it is something I could freeze too, no?

I repinned this from you last week and tried it for dinner last night! It was soooooo good. Definitely a new staple.

I’m actually eating the leftovers for lunch right now as I type this.

You know Pesto is my diet weakness, right? I’m going to blame you for the 5 pounds I won’t lose before I have to wear a bridesmaid dress next month.

This looks DELICIOUS. On next week’s menu 🙂

Mmmmm, delish! I love me some pesto, though. I’d probably eat it over almost anything. 🙂
