Avocado-lime pasta

This recipe is brought to you by my (real-life) friend, Rebecca. This is a vegan recipe that she often eats for lunch at work, and I decided it looked so yummy that I wanted to try it myself. Ryan and I had it for supper with a salad and it was super tasty. Even Ryan liked this recipe, and he was definitely unsure about the idea of avocado, lime and pasta together.

I doubled Rebecca’s recipe, and my modifications are listed below.

Avocado-lime pasta

In a food processor, pulse:
2 avocados
2 limes, juiced
3 cloves of garlic
Bunch of cilantro, chopped

Add olive oil until it reaches desired consistency (it will be similar to a pesto).

Toss with a half-box of wheat pasta, cooked. Serve cold.

This would also make a really good side dish, but we enjoyed it as the main meal. =)

    Oh, I used garden vegetable pasta instead of wheat pasta and added two fresh tomatoes in with the pasta as well. Very, very tasty!

    Thank you so much for sharing. I think I found a new favorite food. Stephen will never eat it. Joseph doesn’t believe me when I tell him it’s tasty, but that’s ok. MORE FOR ME!

    There is a recipe like this floating around pintrest. I made it this summer, kind of….I used lemon instead of lime and basil for cilantro. Good enough I guess.

    So thanks for making more work for me. Kidding, I could eat an avocado whole, so this is right up my alley.

    OOOOO! Avocados are one of my favorite foods. I can’t wait to try this! I think this is going to have to be a lunch dish since Stephen won’t even touch avocados or anything green. But Joseph and I can enjoy it!

    YUM! I think that looks great. I don’t know about picky, whiney T, but I could see myself enjoying this dish.

    FYI, I noticed your recipe posted twice yesterday and I see this one twice today. I just wanted to let you know in case it’s a glitch or something!

    This sounds delish! I will definitly be making this for lunch soon. I wish my MR. would eat it, but he won’t eat any of the ingrediants alone, so certainly not altogher. LOL! He is too picky.
