A tale of two (slow cooker) chilis

October 18, 2012 by Kim Woodward

For the sign-making workshop, I thought chili would be an appropriate fall meal that could feed a crowd. Plus, I could prep them in the Crock Pot, which was an added bonus.

These recipes drew rave reviews from guests. I’ve made the beef chili before, but the white chili was a new recipe that my buddy Rachel at Maybe Matilda gave me. (Thanks, Rachel!)

So, here they are.
Southwestern chili
(Modified from Homespun Threads)
2 pounds of ground beef, chicken or turkey
2 packages of chili seasoning
1 large can (28 oz) tomato sauce
1 large can (28 oz) diced tomatoes
2 cans (15 oz) of black beans
1 diced onion
1 can (15 oz) corn (the recipe calls for Mexican corn, but I just use normal corn)
Green bell pepper, halved and diced

Add meat, onion and bell peppers into slow cooker. Add all other ingredients and give it a stir. Cook on low all day.

White chicken chili
(Modified from Closet Cooking, introduced to me by Maybe Matilda)
1 diced onion
4 cloves minced garlic
1 tablespoon cumin
2 (4.5 ounce) cans chopped green chilies
2 diced jalapeno peppers
3 cups chicken (cooked and shredded)
2 (19 ounce) cans northern beans (drained and rinsed)
2 cups chicken stock
1 teaspoon oregano
Salt and pepper to taste
2 tablespoons cornmeal
1/2 cup milk

Add all ingredients except cornmeal and milk to the slow cooker and give a big stir. Cook on low all day (8 hours). About an hour before serving, mix the cornmeal into the milk and then stir it into the chili and simmer (you may need to turn it up to high) until ready to eat.

Holy cow, these are so good. I can’t even choose a favorite. Neither can Michelle – this is her “I love this chili” face.

What’s your favorite chili recipe?

using Movable-type on numerous websites for about a year and am
nervous about switching to another platform. I have heard good things about blogengine.

This sign-making party looks like a blast! And I am a sucker for any chili recipe… I especially love the white chili versions. Can’t wait to make some this fall/winter!

I’m so glad your party went off well, and white and red chili together on a buffet sounds heavenly!! I’ve made the white chicken chili before, and it is terrific! I think the original source of it – that Closet Cooking alludes to as going around the internet, but doesn’t identify – is the Pioneer Woman. here’s the link to the original recipe and i think it gives some nice step-by-step: http://thepioneerwoman.com/cooking/2010/01/simple-hearty-white-chili/.

I’m excited to try the Southwestern recipe you posted – I can’t get enough chili now that there’s crisp weather here in NY!

I just made some tonight, fantastic! 1lb browned turkey, 2 cans Bush’s beans with chili sauce, 1 can kidney beans, 24oz tomato sauce, can chili ready diced tomatoes, chili flavoring package, 1 apple (peeled and diced), maybe 3-4TBSP brown sugar, 1tsp cinnamon…. throw it all together and cook in the crockpot…. holy heaven! 🙂

Chili is a great fall staple. My husband makes a big pot and we freeze it.

I love both classic red bean chili and chicken chili so for me its a toss up! Just depends on which beans we have at home 🙂

Clover Lane’s Tortilla chili is awesome, and different than other chilis. I need a good traditional chili recipe, so I’m stealing yours. Hope you don’t mind 🙂

I’m so glad Michelle never looks normal in pictures. It makes me love her even more. And I’m also so glad you liked the white chili recipe! I love it–I really love white chili but don’t care much for regular chili (red chili?), so that is all we ever have. So good!

Yummm! I love white chicken chili but I get scared of recipes that have a bajillion ingredients–this looks manageable!

I love chili! I actually made a very similar white chicken chili last night and I brought it to work today because we are having a miniature chili cook-off! 2 red beef chilis, one red chicken chili and my white chicken chili, it’s going to be an interesting day!

You’re trying to shame me into smiling normal. Aren’t you? Huh? I’m on to your games. NEVER.

Anywho…I really liked your red chili. I’m going to make it for Nate because he hates beans and my chili is ALL beans.
