This summer has meant lots of adventuring. In between visits to the splash park, the pool and road trips, our schedule has been really mixed up. And Henry’s meals and snacks have often been on the go. Which can be a challenge when I’m trying to feed him healthy options.
Until now.
These coconut granola bars are so stinking good for Henry and our entire family – and they are a yummy on-the-go option for breakfast and snacks. (Plus they are great for home, too.) They are also perfect for summer, because there’s no baking involved and they keep well in the fridge or freezer.
The best part? Even though Henry calls them cookies, they are a relatively healthy option. And, NO BAKING? I’m calling that a mom win, folks.

Coconut granola bites
(Adapted from Mel’s Kitchen Cafe)
Ingredients:
- 3 cups old fashioned oats
- 1/2 cup creamy peanut butter
- 1/2 cup almond butter
- 1 cup ground flaxseed
- 1 cup chocolate chips
- 3/4 cup coconut
- 2/3 cup honey
- 2 teaspoons vanilla
- 2 tablespoons coconut oil
Directions:
- Mix all ingredients in a large mixing bowl until well combined.
- Refrigerate mixture for about an hour until chilled.
- Roll into tablespoon-size balls and drop on a lined cookie sheet.
- Refrigerate for 1-2 hours and then serve or freeze in a freezer bag.
When I was eating the coconut bites (by the dozen), I found that they are the perfect complement to Silk Almond Coconut Blend. I’m not usually a big milk drinker, but the almond milk is a a healthy pairing and the coconut flavor is perfect with the bites.

That recipe looks great! Have you tried toasting your oats in a warm oven for a few minutes? Makes a huge (awesome) difference!

Oh my gosh, these granola bites look AMAZING! I seriously want to make them right now. I may need to stop at the store today to get flax seed and chocolate chips. Don’t you love it when you can fool kids into thinking they’re getting a treat when they’re actually getting something healthy? I made some of those little protein ball bite things that were all the pinterest rage a few months ago, and Forrest called them ‘cookie balls’ and begged and begged for them. Muahahahahhaa. So I bet he’d love these. Also, I totally want to try the coconut blend Silk–I loved the protein and fiber version, and the coconut sounds even better!

Until about 6 months ago, the idea of almond milk totally grossed me out. I finally decided to give it a try, and I love it! Even my husband now loves it, and we both use it in oatmeal, cereal, smoothies … and I even recently used it in blueberry muffins. I haven’t tried the coconut blend yet, this has me thinking I should give it a shot.
And I don’t have kids yet, but those granola bites totally look like something I’d make. I love cubicle-friendly snacks.
