Well, this weekend was less than eventful. Since I worked on Saturday, it made the weekend quite short.
My goals of a home project and cleaning were put off when I started feeling under the weather.
Seriously… I don’t have time to be ill. And, I’m not a nice sick person. Maybe it’s karma since I made fun of the hubs when he was sick. Now, I’m the one who is drained, sore and complaining.
However, I did make a new home-cooked meal before I turned into a sick monster. It turned out well and was simple enough.
On Saturday night, we had a nice dinner in. I made Chicken Breast with wild mushrooms, modified from my Rival Crock Pot Cookbook. It was quite good if you like mushrooms.
Chicken breast with wild mushrooms
(it looked similar to this when completed)
3 skinless, boneless chicken breasts
1 tsp. lemon salt
1 tsp. black pepper
1 tsp. salt
1 tsp. garlic powder
1 (10 3/4 oz) can cream of chicken soup
1 (10 3/4 oz) can cream of mushroom soup
8 sliced mushrooms
3 shitake mushrooms, sliced
4 portabella mushrooms, sliced
1 tbs. fresh Italian parsley, minced
1 clove garlic, minced
Season chicken with lemon salt, pepper, salt and garlic powder. Place in Crock Pot.
In a bowl, combine soups, mushrooms, parsley and garlic. Pour sauce of chicken in the Crock Pot and cook on low for 6-8 hours or high 3-4 hours.
I made it with these creamy garlic mashed potatoes (modified for two people) and sourdough bread rolls (which I made from a box from the grocery store). Everything tasted great, but next time, I will put half the garlic in the mashed potatoes and substitute the chicken for beef in the recipe.

It’s a lovely little recipe book that I picked up at Border’s last week. The notebook divides pages for starters, fish, meat, vegetables, baking and desserts. It also has pockets in each section and in the back.
I finally got around to transferring my recipes into it – those from the blog and others we have tried. I decided not to write the recipes in the book until we have made them. So, I’m dating them and putting notes at the bottom. I think it will work well to have a central location for recipes. I went through all my cookbooks and wrote down the recipes I’d like to try. After I do, I will put them in my recipe book. I put clippings and note cards that I want to try into the pockets inside. I think it’s a good system for us. =)

Love the recipe book! We went to a Christmas party! Everyone in our Sunday School class was soo busy around the actual holidays, we decided to have our party after they were all over. I’m so glad we did! We had over 40 people there, and everyone was so much more relaxed, and stayed much longer, without the added holiday stress. Oh, and the people who hosted had a FANTASTICE home. If I lived there, I’d get lost!
