I have a vice, friends. I don’t like to draw attention to it online, but it’s time to come clean.
I’m an iced coffee addict.
Sometimes it’s from the local drive through. Other days, I feed the addiction with a bottled version. Now, I have another option that’s even – dare I say it? – a bit healthier.
Since I am a bit of an iced coffee junkie, I jumped at the chance to try Silk Iced Latte when offered. I didn’t know what to expect, but was pleasantly surprised. Served over ice, it’s a great option for my morning iced coffee routine.
Not to mention it only has 100 calories per serving and no artificial sweeteners!
It’s a bit thicker and chocolatier than I’m used to in my other versions – but I’m not complaining. It’s like grown-up chocolate milk.
And who doesn’t love chocolate milk?
Silk Latte was the perfect accompaniment to my breakfast of champions – banana oat and chocolate muffins. Both the muffins and the drink are good enough that you may forget that they won’t break your diet. (Assuming you are on a diet. I’m certainly not.)
PS – here’s my recipe for the muffins, because I’m feeling extra generous today.
Banana, oat and chocolate chip muffins
- 3-4 mashed bananas
- 1 egg
- 1/2 cup packed brown sugar
1/3 cup applesauce - 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
2 teaspoons baking powder - 1 teaspoon cinnamon
- 1 1/4 teaspoons salt
1 cup oats - 1/2 cup mini chocolate chips
Mix your bananas, egg, sugar, vanilla and applesauce. Then add all of the dry ingredients, stirring in oatmeal last. Sprinkle with chocolate chips. Pour batter into greased cupcake tins. Bake at 350 for 25 minutes.
