You may remember that one of my goals this month is to try to find a better breakfast option.
Because seriously, the really sweet gal who works the drive-through at McDonald’s on weekday mornings knows me. Sadly, I’m not making this up. She has morphed from a polite friendly hello to hearty, “hey buddy, let me get you your two sweeteners without you asking” hello. I’ve actually considered the fact that I see her enough that I should probably get her a small Christmas gift.
Wow. You can take that in for a second.
Anyhoo. I must break my addiction to iced coffee and breakfast sandwiches from the golden arches. But. I’m really lazy. And tired in the morning. And the fast food restaurant is reeeeeally close to Henry’s daycare. So, I’m spending too many calories and too much money on the McWhatevers. And my new friend will probably be just fine without seeing my smiling face every morning.
All that to say, I have a muffin recipe that is pretty darn tasty and actually fills me up relatively well. Enough that I could possibly stop eating fast food and clogging my arteries. I have been trying my darndest to make a smoothie each night before I go to bed to eat with the pumpkin muffin in the morning. I can eat while Henry is having his bottle.
Here is the recipe I used. I think the peanut butter and walnuts make it more filling, and there is some pretty healthy stuff in these puppies, so I consider it a win.
(And I apologize for the lack of pictures. It is dark at, like, 3 p.m. And I’m seriously tired.)
Pumpkin-walnut muffins
modified from Carrots ‘n’ Cake
- 1 cup flour
- 1 cup canned pumpkin
- 2 eggs
- 1/4 cup peanut butter
- 1/4 cup honey
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
- 3/4 cup chopped walnuts

I do add about 1 tsp almond extract to it as well and I omit the bananas. I also use mini chocolate chips so the chocolate doesn’t overwhelm you. We’ve also tried it with strawberries instead of raspberries and it was so good.

Those sound delicious! I love muffins :). Not that you have extra time on your hands, but I made and froze a whole bunch of egg on english muffin breakfast sandwiches in the past and took them for a week. Only because, let’s be serious, nothing beats an egg sandwich in the morning!

I hear ya on the breakfast dilemma. It doesn’t help that the cafeteria at my work (which I need to walk through to get to my cubicle) had delicious chocolate croissants! Here’s what I’ve been making this fall to keep myself away from more fattening options: Pumpkin Oatmeal Breakfast Cookies! I make a batch over the weekend, and then I have breakfast for the week. Even my boyfriend loves them, and his initial reaction when I told him they doesn’t have flour, eggs or sugar was, “But I LIKE flour, eggs and sugar!”

You know what my problem would be with these muffins? We would stuff the whole batch in our faces in a matter of a day or two, and then I’d be back to square one. I hope the same isn’t true for you!!!

I like granola, greek yogurt and dried cranberries. It’s filling and healthy – and you can change it up with seasonal berries, dried fruit or a banana. I like to make it in a mason jar, grab and go! The recipe for granola on my blog is simple and delicious.

Oh do I know what you mean! Did you ever think of making breakfast sands and put in freezer? I know I try to make ahead but sometimes I just crave breakfast sands from McDonald’s!

Sounds good. YOu made me laugh today about the Golden arches, but it’s so easy to get in that rut. I did a lot when I worked, and still get an “eat out for lunch” rut.

Mmmm, these sound tasty! I struggle with breakfasts, too. It takes REAL food to fill me up until lunch (like, not cereal, not a granola bar, etc.), and I’m usually too lazy to make real food for breakfast, so I’m starving and grumpy all day. I’m going to make these!
And a funny story: Forrest is sitting on my lap while I read your post, and he saw the picture of Henry on the side and pointed and very excitedly said, “Nany!” (Baby.) Then I scrolled down a little bit to keep reading and the pugs came into view and he pointed and very excitedly said, “Bear!” He thinks your dogs are bears. I’m not sure why I find that so hilarious, but I’m still chuckling over it 🙂

Girl, if I had a car, I’d be in trouble.
I hate most fast food, but there is something about those egg McMuffins that pull me back!
