Before Henry arrived, I had the best of intentions to make tons of freezer meals to make the transition to motherhood a bit simpler.
But, I just didn’t get around to it. I had only gotten around to making a few freezer pasta bakes before his decided to make an early appearance.
So my more realistic I’m a mom and I don’t want to spend hours in the kitchen plan is to make some freezer meals by doubling recipes I’m already making. That way, I’m storing away dinners while making dinners.
As I make them, I figure I should share them, I’ll share how I like them. So far, I’ve had a few wins and a few not-our-favorites.
The freezer bake above. A total win. And it’s better after frozen.
So, first, a win. The peppers in our garden were a bust this year. (Thanks to those annoying bunnies.) So, I bought two 3-packs of peppers at Aldis and went to work making one of our favorite summer dishes – stuffed peppers.
This one is super easy to make into a freezer meal. Since the recipe calls for 6 peppers, I just split it up into three containers – I made one and froze two.

I’m making these this weekend for a freezer meal exchange, but was wondering if anybody has tried these in the crockpot?
Also, how do you think it would turn out if you froze prior to baking?

I love this post… I actually have a funny story about freezer meals and my pregnancy! And it includes stuffed peppers : ) They look goooood.

I love stuffed peppers. I am going to add this to my freezer meal list. I have so far made 3 meals: pizza casserole (which was pretty great) and two bags of chicken teriyaki for the crock pot.
We ended up getting a freezer last weekend, and now I need to fill ‘er up!

Thats actually a really good idea – doubling up and freezing the extras. The only thing in our freezer right now is some ham and beans my grandma donated to us.. :/

The only thing I ever remember to make and freeze is pasta sauce … but these peppers look good!

Love this. I just made a ton of freezer meals a couple months ago and I love the whole idea. I just need to get my act together to plan another day of getting the meals together. I think I might need to do this with a friend to make it more fun.

Yum! We recently made stuffed peppers and they were amazing! If I had any space in my freezer I would definitely freeze those.

ok one more question! haha (i’m not good at freezer meals, can you tell?!) what’s the procedure for the pasta bake – would you put that frozen in the oven or does that need to be thawed first, too? thanks 🙂

hey kim! so glad you posted this – i need meal ideas for when this next baby comes! do you thaw the peppers or just put them frozen in the oven and then cook for 40 minutes?
