Grill tip of the day: This is nothing fancy or new, but every time I make these potatoes for guests, people rave over them. They are so simple and yummy. Plus, you can avoid turning on your oven and cleanup is a breeze.
Simply slice up your choice of potatoes (we usually use red roasted or Idaho). The thinner the better. Put one serving of potatoes in an aluminum foil pouch with two small pads of butter, chopped onion and a liberal sprinkling of Jane’s Krazy Salt. (Also consider using some fresh herbs.)
Just close them at the top and grill over medium-high heat. I usually let them go for around 45 minutes so they get extra crunchy and crispy at the bottom.
I like to serve the pouches right on the plate. They’ll stay warm until you are ready to eat. If you can more about presentation, you can obviously serve them our of the foil with some parsley.
Yum! Try it.

My parents used to make potatoes like this all the time when I was little… It’s still my favorite way to eat them!

I love grill cooking! Ever put an entire onion on the grill, skin and all? Or an entire ear of corn? Both would go so well with those potatoes! Everything’s better grilled!!!

I love making potatoes like this! Last time I sprinkled a little smoked paprika on top before grilling and wow were they good. Yum!

Awesome! We are grilling tonight and will give it a try 🙂

Mmmm…. we do this too but instead of butter we toss them in olive oil and add chili powder to the spice mix. So tasty!

Yum! I love potatoes in almost anyway. In the summer I grill thin circles,in a thin aluminium pan with olive oil, thin sliced white/yellow onion, salt and caraway seeds.

I like my potatoes fried, but these look fantastic. I might have to branch out.

Mmm… we do the same thing, with garlic salt and sliced onions so they more easily come along for the ride on my fork. LOL Yummmy!
Also, we make some yummy ranch potatoes. You boil the smaller redskin potatoes until they’re soft.. then slice them in half. Scoop out a little section of the potato and fill it with ranch dressing. Cover that with some chopped bacon pieces and your favorite cheese and then pop it in the oven for about 20 minutes. *swoon* They even taste great cool (that might sound horrible to some, but it’s so good!)

Yum. We make something very very similar with summer squash, potatoes, onions and zucchini. It is to die for, and soooo good for you!

Yum! Scott makes these too and I LOVE them! Sometimes we put sour cream and chives on them when they are finished.

Yum! This is going on my list of things to try, along with the manicotti coming up later this week. I love anything that I can freeze and pull out for later. Do you read smittenkitchen? She is all about flash freezing biscuits and such (so wonderful!), not to mention she’s an amazing cook with great ideas!
