Being home with my little Henry means that lunch has changed. I obviously try to eat at home more often (although I still go out more than I should). The problem? I’m not really a cold cut kind of girl, and I didn’t want to make big meals for one.
Then, I took Henry to a local coffee shop a few weeks ago to get out of the house and had the yummiest sandwich.
I don’t have a panini press. Actually, I did have a panini press for a long time and I got rid of it because it was never used. Darn!
But, I figured I could make my own version like old fashioned grilled cheese – ultra-healthy fried in butter. And this may be the new solution for at-home lunches. The gourmet grilled cheese – or so I like to call it when I’m explaining it to Henry and the pugs. Henry and the pugs don’t actually seem to care, but they are the only living beings around to talk
to at during the day.
There’s really nothing to these – a few slices of mild cheddar, a few slices of fresh mozzarella and my homemade pesto on wheat bread. I fry it in a skillet until everything was melted and gooey and bam!
It’s pretty dang tasty. Although I am still on the lookout for a solution that doesn’t involve frying.
