I like fruit, but I have a hard time getting enough fruit in my daily meals. When I found out I was pregnant, I knew I wanted to try a little harder to get more fruit in my diet for Baby Dub.
So, this is how I do it… a simple smoothie once a day (usually for breakfast in the car on the way to work). I have a generic Bullet so I can quickly make a single serving. (I hate cleaning out the blender, so this is a must.)
This gives me almost all the fruit I need in a day, plus lots of added vitamins from OJ and spinach.ย
I know that lots of smoothie recipes have been floating around the interwebs. I make mine a little different, since I don’t love adding yogurt or milk to it. So, here’s my “recipe” for a power-boost smoothie.
First, stuff the blender cup with the following:
- A big handful of fresh spinach leaves (filling nearly half the cup)
- Half a banana (frozen or fresh) – eat the rest of it while you are working for more fruit
- Frozen fruit to the top – I buy frozen strawberries, mixed berries, peaches and mix it upย each day. You can also use fresh berries if you have them but I like that frozen fruit is easier to keep and makes it more like a frozen shake.
Then, blend it up and voila. Instant pack of vitamins, antioxidants and taste.
That’s what several servings of fruit looks like, friends. The best part is that there is no way to screw this up. I think that bananas, OJ and spinach are a must. But, you can really add any other fruits to make this your own.
How do you get enough fruit in your diet?

I should look into a bullet thing. I always eat breakfast in the car, mostly dry cereal but I would love to add/do this instead. But the freaking blender is big and pain in my (big) butt. I bet you could even fill up the bullet the night before in stash it in the fridge then just add oj. I try to do all morning things the night before…and am still often behind schedule.

That looks delicious! We’ve been making ours with almond milk, spinach, protein powder, banana and flaxseed, but I’ve been adding different more fruit recently.

Awesome, I’m in.
I was making smoothies with yogurt until the baby decided to have a dairy allergy… I never thought to try it without the yogurt (duh, Jen).
I totally add ground flax seed to mine for the omega 3’s (since I rarely eat fish). I keep it in the freezer – it won’t last as long in the cupboard. ๐

I have never thought to put spinach in a smoothie! Can you taste it? When you need a protein punch, my fav is PB & banana smoothie, YUM!! I usually add wheat germ also for some extra goodness ๐

I have that same blender from walmart! I got it for christmas and love it sooo much. It makes making breakfast so easy. I usually just drink shakeology drinks but I think I will have to try this recipe. It looks delicious.

That looks good! I love finding ways to trick myself into having more spinach (vegetables are just not really my thing). Great idea!

I have this same thing every morning in the summer. I can’t stand yogurt or milk either so I go with OJ. Can’t wait for fresh fruit so I can start making them again.

Great idea. I only have an old bulky blender. What kind of faux bullet do you have? Do you like it?

Made this with lunch for Joseph and me yesterday and Joseph LOVED it. He kept passing his cup back to me for more. Finally! A way to get him to eat green stuff!! Thanks again for sharing!

I have more trouble with veggies than fruit, and I have low blood sugar so fruit and juice spike it like crazy and then make me die (as B would say right now, “you’re so dramatic”). But I love a breakfast smoothie – the spinach banana smoothie is perfect for me. Thanks for the inspiration to get back on the horse. I’ll go replenish my spinach, almond milk and protein powder stash right now.

I do a green lemonade every morning.. Best way to start the day ๐ I also like adding avocados to my smoothies!
Chelsea @ {twotwentyone} says
I think I could do this. I’ve heard you can’t taste spinach when you sneak it in with other fruits.

I also add flax seed and a scoop of whatever Amazing Grass I have.

I add a tablespoon of flaxseed powder (I like Bob’s Red Mill) for some great fiber. It keeps you mighty regular; a must for pregnancy constipation. You won’t be sorry.
Sara @ Russet Street Reno says
This is a good idea. I might have to get a bullet!
Erin @ Domestic Adventure says
You are such a responsible momma already! Love it. I might have to try this…

Looks yummy!
Altho I have no problems eating plenty of fruit straight up. I love it. I just wish more of it was in season year round.
Kelly @ Corner of Main says
Thanks Kim! I am totally trying this. I have made smoothies before, but never with spinach. =)

I make with 2 cups of spinach 1 cup of water 1 banana 2 cups frozen mixed berries sweetened with trivia. Absolutely delicious. My husband who eats no veggies and little fruit has one everyday. I just use my blender.
Becky says
Just wanted to know when blended with spinach, can you taste it or does the taste get masked by the fruit? Thanks!
Kim Woodward says
Nope – you shouldn’t taste it at all. That’s the best part! =)
Leah says
that sounds OK. i might try that.

Try Wheat Grass powder in your smoothies. If you like spinach now, it has double the iron of spinach and vitamins galore. I love the stuff!
Michael - Innkeeper says
if you would have told me a week ago to put spinach in my smoothie, i would have thought you were crazy.
Now this past week i’ve heard this like 3-4 times and had to make one myself! delish!
but i do want to ask you, does the ‘magic bullet’ actually work!? i always thought it was one of those cheap ‘sold on tv’ gimmicks. i’d love to get my blender off my counter!
Ashley@AttemptsAtDomestication says
I need to work on my daily fruit, but I hate yogurt and milk so I never make smoothies but OJ instead sounds delicious!
Cindy @The Flipping Couple says
I have a nearly identical breakfast every morning! I do water instead of OJ (not as tasty for sure) and add a scoop of vanilla protein powder. I think the frozen bananas are my favorite part. Sooo creamy and delicious. I’m a HUGE fan of the generic bullet. We usually pick up an extra on Black Friday for $10-15 and save it for one mine dies mid-year. Pretty sure I’ve used our blender less than 5 times since we got married. Hate cleaning that sucker.

Oooh, that looks good! And so good for you and the lil’ one!
I don’t get enough fruit or veg each day.
Amanda @ Serenity Now says
I think that looks really yummy…must give it a try. ๐

Where does one get a generic bullet? I hate cleaning the blender.
yeoldesandwichshoppeva says
Thanks for sharing! I’m trying this tomorrow. I love smoothies, but we haven’t had yogurt in the house for a while and so I haven’t been drinking them. Time to break out the blender.

I’m a fellow breakfast smoothie fan. I’m just a frozen fruit, yogurt, apple/orange juice fan. I need to try the spinach. I need to sneak veggies in my life.
