I made my first new May recipe. I had two bananas that were on their last legs of life. I don’t like eating soft bananas, so I decided to try my hand at banana nut muffins.
The recipe I used is from Carrie’s blog. I pretty much followed the recipe, but subbed items that I didn’t have on hand – baking soda for baking powder and all purpose flour for wheat flour. I also made muffins instead of bread.
It was totally SIMPLE, which is my favorite type of recipe. And, they will make great breakfasts for this week. I will definitely be making these again… perfect for those softy bananas that I don’t get eaten. Highly recommended.
In other news, I woke up on Sunday… and HOLY BLOOMIN’ IRIS, BATMAN…
They finally bloomed. I transplanted a bunch of iris from my uncle’s in June of 2007 and they have yet to bloom. I did a little happy dance when I saw them.
Most of the iris are going crazy and have buds, so I’m excited to see them all bloom.
